Rickhouse (Rackhouse)
Traditional multi-story wooden warehouses where barrels age horizontally on open timber ricks, with dramatic temperature swings between top and bottom floors.
Traditional multi-story wooden-framed storage warehouses where barrels rest horizontally on open timber ricks:
- Top Floors: Extreme heat drives whiskey deep into wood pores and accelerates water evaporation, causing proof to climb (often 120–135+ proof).
- Bottom Floors: Cooler, damper conditions slow extraction and favor alcohol evaporation, holding proof stable or decreasing it.
